Easy Lunch Idea: Southwest Chicken Bowls

I’m all about a simple, quick lunch idea and my go-to is this southwest chicken bowl. Every time Joe works from home we make this recipe. It’s super yummy, healthy and perfect for two people or meal prep for the week.

INGREDIENTS

• Grilled chicken (I grill it on a cast iron pan) with chili lime seasoning from Trader Joe’s. OR if I have time I marinate the chicken the night before with chicken stock and chipotle peppers in adobo sauce (tastes just like chipotle chicken!)

• 1/2 of a bag of Trader Joe’s Mexican Style Roasted Corn with cotija cheese (obsessed with this stuff, it’s like elote in a bag!)

• Chopped red onions

• Jasmine rice mixed with lime and cilantro

• Top it off with sliced avocado, cilantro + a squeeze of lime

Layer the bowls with rice on bottom, then top is with all of your toppings. So good!
